Swinging Tripes and Trillibubkins was written in 1986 and comes from the opera The Intelligence Park to a libretto by Vincent Deane. 'Trillibubkins', meaning 'entrails, the innards of an animal', refers to a feast in Act III: Soup enough to swim in; huge swinging tripes and trillibubkins; pullets not two hours from their shells; rare buttock of veal en daube; melons for ecstasy, a hash of crambe, crambe, crambe. Pig and carrot - dish of queens; calf's heart pudding; bowls of flummery: gardens, forests and menageries cut down to grace our table.
