The correlation between food and health, and in particular the role of dietary habits in the aetiology of coronary heart disease, stroke and cancer, has been the source of intensive research for some time. At the international symposium "Diet and Health in Europe", specialists were given an opportunity to present and compare their research results in this area. This volume features selected papers which not only examine the relationship between intake patterns of different foods and health, but also provide a comparative look at food patterns and health problems in various parts of Europe. In addition, the validity and limitations of the various methods used for collecting data are assessed in papers on methodology, biologicial markers and the role of case-control and long-term prospective studies.
