A Stunning Recipe from Wagamama

Chilli Beef Udon 

A warming plate of spicy teriyaki noodles – a great dish for steak lovers.

Serves 2


1 x 250–300g (9–10oz) sirloin steak, cut into 5mm (¼ in) slices

2 tablespoons oil

1 medium-size pak choi, leaves separated

½ red onion, thinly sliced

½ leek, chopped in half lengthways and finely sliced at an angle

4 asparagus stems, each chopped into 3

100g (3 ½oz) beansprouts

1 free-range egg, beaten

250g (9oz) cooked udon noodles

30ml (1fl oz) spicy teriyaki sauce 

A few sprigs of coriander, leaves picked and chopped

1 red chilli, sliced

Salt and cracked black pepper


Season the steak with salt and pepper.

Place a medium-size frying pan over a high heat, add the oil and, when hot, stir-fry the steak to sear the edges. Add all of the vegetables and toss in the pan.

Turn the heat down to medium, add the beaten egg and udon noodles and cook, stirring all the time, so that the egg scrambles throughout the dish.

Add the spicy teriyaki sauce and mix well until all the stir-fry is coated in the sauce.

Divide between two plates and garnish with coriander and sliced chilli.

To make this dish vegetarian, use a mixture of shiitake and oyster mushrooms, instead of the steak.
